French toast!

I love French toast it took me years to figure out how to get the bread to stay together. NEVER USE thin bread because of the milk and egg it’s going to make the bread tear apart. So ALWAYS go for thick bread slices when making French toast. With this French toast you don’t need butter. The buttermilk gives it taste like I buttered the bread (which I didn’t). If you’re thinking ewwww fiber it’s NOT NASTY! It’s called fiber brunch because berries are filled with fiber and the thickest bread we have is our fiber bread, which is good. If you’re on a diet this is really great for you because you need to have all your carbs in the morning so you can burn them off throughout the day. And all of the fiber is good for you regardless. Your getting protein, grains and fruit from this meal!

Fiber brunch for one
Flaxseed French toast with honey berry and yogurt topping (optional)
¼ cup buttermilk
¼ cup non fat milk
Egg white
3 slices of fiber bread or thick bread
¼ teaspoon nutmeg
1/8 teaspoon all spice
¼ teaspoon cinnamon
½ teaspoon vanilla
½ teaspoon sea salt
1 teaspoon of flaxseed
½ cup of thawed berries
¼ cup honey
¼ cup yogurt

Egg scramble
1 eggs
½ cup of spinach
¼ cup of bell peppers
¼ onions
1 teaspoon curry
1/4  teaspoon sea salt

First whisk the milk and egg white add your seasonings and vanilla
Let it stand for 5 minutes
If you need to slice whatever berries you’re using do that and add ¼ cup of honey to the berries
Spray your pan with olive oil cooking spray or whatever kind of cooking spray you have turn it up to medium high heat
After the 5 minutes are up dunk the bread into the milk mixture make sure the bread is coated and is soaked with the milk mixture
Place your soaked slices of bread in your pan and flip them every 5 minutes until they are cooked how you like them
Now to the eggs
Wash your veggies cut them up throw them in the bowl with your eggs throw in your curry and sea salt mix it all up and cook them how you like your eggs
When your French toast is done place them on your plate add a teaspoon of flaxseed to the berry and honey mixture stir it up and pour the mixture over your French toast if you want some yogurt put it on top of your berry mixture
ENJOY!
